In the News: The New York Times on "How healthy are mushrooms?"

How healthy are mushrooms? This month, The New York Times took on this question. The short answer: "mushrooms are in a class of their own." The longer answer:

๐Ÿ„ They are a wonderful source of two (!) types of fiber.
๐Ÿ„โ€๐ŸŸซ They are rich in antioxidants, especially Trumpet Royale (pictured).
๐Ÿ„ They are good sources of B vitamins and produce vitamin D!

Plus, they're delicious.
